This squash pizza spotlights summer-fresh zucchini paired with mild cheese and smoked protein, sure to satisfy those not impressed by the star vegetable.
Pizza dough for 2
Olive oil
2 zucchinis
2T mayonnaise
2T sour cream
1T parsley, chopped
1 lemon, juiced
2 eggs
1/3C chopped ham or shredded smoked salmon
1/2C asiago or pecorino cheese, grated
Heat oven with a pizza stone on the bottom rack to 550. Spread the pizza dough out on a peel and let it rest. Microwave the zucchini for one minute to soften slightly. Slice into small coins when cool. In a small bowl, combine the mayo, sour cream, parsley and lemon. Season and let sit. When the dough is ready, slather on the sauce. Top with zucchini coins, leaving a hole in the center for the egg. Crack the egg into the hole. Sprinkle the top with the ham or salmon followed by the cheese. Slide the pizza into the oven and bake for 10 minutes. Let cool for 5 minutes before serving.
