The most commonly found vegetables in Escabeche are usually the carrots and onions that you will find with canned Jalapenos. If you want a more interesting blend, use Hot Giardenia. If you have cumin seed instead of ground cumin you can use that as well as whole chilies instead of the chili powder. Add them to the mortar and pestle mix.
1lb albacore
1t oregano
1t thyme
1T annatto seed
3 scallions
1t cumin
2T chili powder
1t brown sugar or honey
1T apple cider vinegar
Juice of 1 orange and 1 lime
1 bay leaf
Corn tortillas
¼ C cilantro
Sour cream
½ c olives
1c marinated vegetables such in Escabeche or Hot Giardenia
Combine the oregano, thyme, annatto, and 1 scallion in a mortar and pestle and pound until it forms a paste. Cut up albacore into large chunks. Add the paste to the fish and toss. Add the cumin, chili powder and sugar and mix. Add the vinegar and fruit juice, snuggle a bay leaf in there and let marinate for an hour or so.
