Summer BBQ Sauce

Stone fruit like peaches, nectarines or plumbs, may be substituted for the mango. Most people can find tasty mangoes year round as opposed to the other fruits. This sweet and spicy BBQ sauce works well on pork, seafood and chicken.

1 slice bacon, chopped

1 mango, peeled, seeded and chopped

½ a large red onion, minced

1T sherry vinegar

2T sherry

¼ t of cayenne pepper or 1t hot sauce

1T honey

2T tomato paste

Zest and juice of 1 lime

In a saucepan, render the fat from bacon, add fruit and onion.  When the onion is soft, add the vinegar and let it cook off. Add the sherry and let it cook another minute or two. Add the pepper or hot sauce, honey, tomato past and ½ C water. Cover and cook until thick over low heat, about a half an hour.  Finish with lime. Transfer to a blender or with an immersion blender, puree until smooth.

Makes 1 cup

Cooking time: Approximately 1 hour
