Whether served as a slider or a tea sandwich, with salmon or steelhead, these little bites make for a great use of leftovers.
1/2c cooked peas
Hot sauce to taste
1lb of steelhead, cooked
2 celery ribs, minced
1c mayo or to taste
2 green onions sliced
Juice of one lime
½ a head of lettuce or so
Sliced bread or slider buns
In a food processor, combine peas with 1 green onion, hot sauce and 1T of mayo. Process until smooth. Mix steelhead with celery, remaining green onion, lime and mayo to moisten as you like it. Spread pea mixture on the bread. Top with lettuce and steelhead mixture. Top with another piece of lettuce and remaining pea spreaded bread.
