A perfect compliment to most bean recipes.
1 strip bacon, cut into large slices
6 scallions, sliced
2 stalks celery, minced
1 orange or yellow bell pepper, minced
1 garlic clove, grated
1 bay leaf
1T thyme
2 whole dried chile de arbol
1c rice
In a rice cooker or pot, render the bacon over medium heat until soft. Add the scallions, celery and pepper and simmer until wilted. Add garlic, bay leaf, thyme and chilies and stir until fragrant. Add rice, season with salt and pepper and stir fry, tossing often to toast the rice for about 5 minutes. Add 2 cups of water. Cover and cook until the rice is done. 25 minutes for white rice and 50 minutes for brown.
