Pepper-roni Pizza

With sweet peppers and spicy pepperoni, this easy pepper pizza hits on all bases. Sweet, spicy and simple.

Olive oil

1 large red bell pepper, julienned

1 small tomato, diced

1t fresh oregano, chopped

Pinch of ground cinnamon

Pinch of sugar

Pinch of salt

6-8 slices of pepperoni

¼ cup semi-soft goat or sheep’s milk cheese (like a goat gouda)

Heat oven with a pizza stone on the bottom rack to 550. Spread the pizza dough out on a peel, brush with olive oil and let it rest for 15 minutes.  In a hot skillet, add oil to taste followed by the pepper. Cook until peppers are soft and brown spots begin to appear. Add tomato and cook until the tomato is soft and no liquid remains. Add the oregano and spices and turn off the heat. Let the topping cool a little. When cool. Top the pizza with the pepper mixture. Top peppers with pepperoni and then sprinkle on the cheese. Slide the pizza into the oven and bake for 10 minutes. Let cool for 5 minutes before serving
