Unless you like the caloric punch of the full coconut cream variety of a piña colada, this light version has all the flavor and none of the fat, allowing you to drink it by the pint glass. You may get some separation as the ice melts so drink it cold.
1 16oz canned pineapple
3 bananas
1 ½ c Rum
Juice of 1 ½ limes
3 t agave syrup
3 C coconut water, with or without pulp
For each pitcher, combine 1/3 can of pineapple, one banana, the juice of ½ a lime, ½ a cup of rum, 1 teaspoon agave and 1 can of coconut water in a blender filled with ice. Process until smooth.
