Garlic oven fries

These oven fries satisfy as a healthy side dish that can be served with formal and informal meals alike. They can even stand in as an appetizer.

2T mayonnaise

2T Greek yogurt

2 garlic cloves, grated

Zest and juice of 1 lemon

2T olive oil

2T rosemary or thyme, or a combination of the two, chopped fine

2 russet potatoes, sliced into thick fries or wedges

Preheat oven to 425.  In a dip bowl, combine mayonnaise, yogurt, 1 clove garlic and lemon and set aside at room temperature.  In a large bowl, combine 1T of olive oil, herbs, the second clove of garlic and potatoes.  Toss until coated and season.  Spread 1T of olive oil evenly on a baking sheet and add potatoes in an even layer so none are touching.  Bake for 20 minutes.  With a metal spatula, turn fries over to cook on the other side for 20 minutes.  Serve with the garlic dip.
