Some people sneer at the thought of a hot potato salad. To appease those people we call this a casserole.
2lb potatoes
1/4 C cider vinegar
1T sugar
1/2t salt
1/2C sour cream
1/4C Havarti cheese, cut into chunks
5 gherkins, chopped
1 T whole ground mustard
Boil potatoes whole in water until fork tender. Drain and return the potatoes to the same pot but turn off the heat. Let the potatoes sit until the sizzling stops. Pour them out into a large bowl and cut into chunks while still hot. Toss with vinegar, sugar and salt and put in the refrigerator to chill for 15 minutes or until cool. Add the rest of the ingredients and mix thoroughly. Bake in a 350-degree oven for 20 minutes or until the cheese has melted and the casserole has warmed through.
Cooking time: 1 hour
Serves 4-6 as a side dish
